In the Kitchen:

Scones

2 cups all purpose flour
2 tsp baking powder
1 tbl sugar
1/2 tsp salt
1/2 cup cold butter
2 lg eggs, beaten
1 cup whipping cream
confectioner's sugar

Preheat over to 425

Combine flour, baking powder, sugar and salt. Cut in butter until pea sized crumbs. Add 3/4 c. cream and eggs. Mix until dough forms. Pat out into a circle 1 inch thick. Cut as desired. Place on cooking sheet 1 inch apart. Brush with cream and bake for 10-15 minutes Sprinkle with powdered sugar while hot.

Chai

1 c. Water
1 sm. stick of cinnamon
6 cardamom pods
6 whole cloves
Ginger root ( I use a bit of dried ginger)
1/2 c. milk
4 tsp sugar
2 tsp loose Darjeeling tea

Bring first 5 ingredients to a boil, cover and simmer 10 minutes to release flavor.
Add milk and sugar, return to simmer stirring until sugar disolves. Remove from heat. Add tea leaves, steep for 3-5 minutes depending on how strong you like it. Strain and serve.
