In the Kitchen:
Crunchy Granola
1 cup packed dark brown sugar
½ cup water
4 tsp vanilla extract
1 tsp salt
8 cups old fashioned rolled oats
2 cups chopped nuts or seeds
2 cups dried fruit
Preheat oven to 275. Line 2 cookie sheets with parchment paper. Combine brown sugar and water in a 4 cup microwave safe measuring cup (It will boil over if you use a smaller one, trust me). Microwave on high for 5 minutes until sugar is dissolved. Add vanilla extract and salt. Stir until salt dissolves. Place nuts and oats in a bowl and pour brown sugar mixture over them. Mix. Spread onto cookie sheets and squeeze granola into clumps as you put it on the sheets. Bake 45- 60 minutes until golden and crunchy. Add fruit and allow to cool. Store in an airtight container.
