In the Kitchen:

Easy Italian Dinner


INSIDE OUT RAVIOLI

1 1/2 lbs. ground beef
1 med. onion, chopped (approximately 1/2 cup)
1 garlic clove, minced
1/2 pkg. frozen chopped spinach
1 (15 1/2 oz.) jar spaghetti sauce
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 tsp. salt
Dash pepper
1 (7 oz.) pkg. shell macaroni, cooked al dente
1 c. cheddar cheese, shredded (approximately 4 oz.)
1/2 c. bread crumbs
2 eggs, well-beaten
1/4 c. oil


In large skillet brown ground beef with onion and garlic. Cook spinach according to package directions. Drain well, reserving 1 cup liquid. Stir spinach liquid, spaghetti sauce, tomato paste, tomato sauce, salt and pepper into meat mixture. Simmer over low heat 10 minutes, stirring occasionally.
In a bowl combine spinach, macaroni, cheese, bread crumbs, eggs and oil. Spread in 9x13 inch pan. Top with meat sauce. Bake uncovered at 350 degrees for 25-30 minutes.
Let stand 5-10 minutes before serving.
Serve with salad Garlic bread and a dessert like Rachel Ray’s Quick Tiramisu

Measurements-

Pattern asks for: Chest, neck, raglan, sleeve, Wrist, Body length
Add: Neck to waist, Bust. Side to nipple, Nipple to nipple

In the Kitchen:


Easy lemon Bars

1 Angel food cake mix
1 can Lemon pie filling (20-22 oz)
1 cup coconut

Mix 3 ingredients together.
Grease the bottom of 13 x 9” pan. Pour mixture into pan and bake at 350 for 40 minutes.

Icing

3 oz cream cheese
¼ cup confectioners sugar

(Neither has to be exact so if you get a 4 oz Cr. Cheese bar it is okay)
Whip together until smooth and frost cooled bars.
Can use pineapple pie filling, blueberry pie filling, apple pie filling.
I don’t suggest black berry as it didn’t turn out tasting very good.
Cut and serve.

In the kitchen:

Thanksgiving snacks


Pickle roll ups

Ham or turkey cold cuts
Dill pickle spears
Cream cheese-cut up
Take a cold cut, place cream cheese and pickle inside.
Roll up.
Hold with toothpick

Stuffed Dates

1 pound pitted dates
1 pound bacon, cut in half (can be turkey bacon)
1 lb chestnuts - peeled
Toothpicks soaked over night in water
Insert one chestnut into each date and wrap with bacon.
Hold with wet toothpick.
Place on cookie sheet.
Bake for 20 minutes at 375 degrees.

Russian Tea Mix
1/2 cup instant tea powder
2 cups Tang
1 pkg lemonade Kool-Aid- unsweetened
3/4 cup white sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
Directions:
In a large bowl, mix together powdered drink mixes, sugar, and spices. Place in jars.
Instructions to include with gift:
Place 2 to 3 rounded teaspoonfuls in a cup
Add boiling water and serve.

In the Kitchen:

Enchilada Casserole

1 lb. lean ground meat (I use chicken)

1 medium onion, chopped

1 10oz can enchilada sauce

½ tsp. garlic powder

½ tsp. black pepper

8 corn tortilla, sliced up

½ c. shredded cheddar cheese

½ c. shredded Monterrey Jack Cheese

Brown meat, add onion and cook until translucent. Drain.Put in 2 Qt. casserole dish. Add sauce & seasonings and stir. Fold in ½ of tortilla slices. Fold in other ½ and ½ of the cheese. Smooth out. Put the rest of the cheese on top.

Bake at 325 about 30 minutes or until bubbly. Serve with Refried beans and Spanish rice.

In the Kitchen:


Pulled Meat Sammie
2-3 pounds of lean meat (pork roast, chicken or beef)
1 small jar unsweetened Applesauce
1 bottle of cheap traditional BBQ sauce
Rolls
Coleslaw (optional)
Place meat in crock-pot. Pour applesauce over; pour ½ of BBQ sauce over.
Place lid and cook on high for 4 hours. At this time if your meat has fat on it, defat it.
Cook another 2 hours on low for chicken or high for other meats.
About ½ hour before serving, pull meat apart with forks, take out any more fat you see and the bones. Pour the other ½ of the BBQ and stir. Cook for the next ½ hour on low.
To serve, Place meat on rolls, add coleslaw if you wish.

In the kitchen:



Beef Tips with noodles
1 lb Beef tips
1 small onion chopped
Garlic powder to taste
Brown gravy packet
1 can cream of chicken or mushroom soup
Small bit of milk to thin out soup
1-package egg noodles – cooked

Brown beef tips, add onion and garlic powder, cook until golden. Add cream of mushroom soup and milk. Stir picking up meat drippings from pan.
Pour over noodles
Serve with veggies of your choice and a crusty roll
