In the Kitchen:


Stuffed chicken
4 chicken breasts- Boneless/ skinless Pound flat
Olive oil/mayo/eggs beaten- your choice
½ cup Italian bread crumbs
Frozen chopped spinach cooked & drained
1 can diced tomatoes-drained
¼ diced onion (or 2 tbl dried diced)
1 & 1/2 cup mozzarella or Monterey Jack cheese
Spray a 13x9 inch pan or foil line- trust me on this.
In small bowl mix spinach, tomatoes, onion and 1 cup of cheese.
Dip or slather chicken with your choice of sticky stuff. Then roll in bread crumbs. Lay flat in pan and fill each piece with veggie mixture. Roll up and secure with toothpick.
Bake at 375 for 45 minutes or until chicken is done
Top with rest of cheese and serve.
If you’re not a spinach lover, you can use chopped broccoli and cheddar cheese instead.

Cooking School: On recess

In the Kitchen:

Wet Burritos
Flour tortillas
1 pound ground meat
1 small chopped onion
1 handful cilantro chopped
Cumin, garlic and chili powder to taste
1 can refried beans
1 can enchilada sauce
Shredded Jack Cheese
Brown ground meat, add onions, cilantro and spices to taste. Drain. Heat refried beans and sauce.
On plate place tortilla, add beans, meat mixture and cheese, fold and roll into burrito shape. Top with enchilada sauce. I serve with Spanish rice and a salad
